Apricot Rice Pudding Pops
What a great frozen treat! These Apricot Rice Pudding Pops have the creamy goodness of rice pudding and the fruity sweetness of apricots. Great as a snack on a hot day to cool off!
Ingredients:
- 1 cup cooked rice
- 1 cup apricot preserves
- 2 cups whole milk
- 1/2 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions:
Add the cooked rice, apricot preserves, milk, heavy cream, sugar, vanilla extract, and salt to a saucepan
Stir the mixture all the time over medium-low heat for about 15 to 20 minutes, or until it gets thicker
Take it off the heat and let it cool down a bit
Put the mix into popsicle molds
Put in popsicle sticks and freeze until solid, which should take between 4 and 6 hours or overnight
Take the popsicles out of the molds and enjoy once they are frozen
