Asian Pork Noodle Salad



A tasty and cool salad with soft pork, crunchy vegetables, and rice noodles tossed in a sour Asian-style dressing. Great for a quick and healthy meal!

Ingredients:

  • 1 lb pork tenderloin, sliced
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1/4 cup brown sugar
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 8 oz rice noodles
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup peanuts, chopped

Instructions:

Soy sauce, hoisin sauce, garlic, ginger, brown sugar, rice vinegar, and water should all be put into a slow cooker

Cover the pork tenderloin slices in the sauce mixture and put them in the slow cooker

Leave the lid on and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the pork is soft

Follow the directions on the package to cook the rice noodles about 30 minutes before you serve them

Remove the water and set it aside

Use two forks to shred the pork after it's done cooking

Shred the pork and put it in a large bowl with the cooked noodles, carrot, red bell pepper, green onions, cilantro, and peanuts

Mix everything together until it's well blended

If you want, you can serve the Asian pork noodle salad cold or room temperature

If you want, you can add more cilantro and peanuts as a garnish
