Slow Cooker Chicken and Corn Chowder
A warm and creamy chowder made with soft chicken, sweet corn, and hearty vegetables that are cooked slowly in a rich broth until they are just right.
Ingredients:
- 1 lb boneless, skinless chicken breasts, diced
- 4 cups chicken broth
- 3 cups frozen corn kernels
- 1 onion, diced
- 3 cloves garlic, minced
- 2 potatoes, peeled and diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon paprika
- 1 cup heavy cream
- Salt and pepper to taste
Instructions:
In a slow cooker, combine chicken, chicken broth, corn, onion, garlic, potatoes, carrots, celery, thyme, parsley, and paprika
Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and vegetables are tender
Stir in heavy cream during the last 30 minutes of cooking
Season with salt and pepper to taste before serving
