Low-Carb Gluten-Free Mini Quiches

Ingredients:
- 6 large eggs
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped spinach
- 1/4 cup diced bell peppers
- 1/4 cup diced ham
- 1/4 cup shredded cheddar cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
Instructions:
Preheat oven to 350F 175C and grease a muffin tin
In a mixing bowl, whisk together eggs, almond flour, Parmesan cheese, salt, pepper, garlic powder, and onion powder until well combined
Stir in chopped spinach, diced bell peppers, diced ham, and shredded cheddar cheese
Pour the mixture evenly into the muffin tin cups
Bake in the preheated oven for 20-25 minutes or until the quiches are set and slightly golden on top
Allow them to cool for a few minutes before serving
