One Pan Bucatini with Leeks and Lemon
This bucatini with leeks and lemon in one pan is a quick and tasty pasta dish that's great for busy weeknights. When you mix sweet leeks, sour lemon, and salty Parmesan, you get a perfectly balanced meal.
Ingredients:
- 1 tablespoon olive oil
- 2 leeks, thinly sliced
- 3 cloves garlic, minced
- 8 ounces bucatini pasta
- 3 cups vegetable broth
- 1 lemon, zest and juice
- Salt and pepper to taste
- Grated Parmesan cheese for serving
- Fresh parsley, chopped, for garnish
Instructions:
Heat olive oil in a large skillet over medium heat
Add sliced leeks and minced garlic, saut until softened, about 5 minutes
Add bucatini pasta to the skillet, pour in vegetable broth, lemon zest, and lemon juice
Season with salt and pepper to taste
Cover and simmer for 10-12 minutes, or until pasta is cooked and most of the liquid is absorbed, stirring occasionally
Serve hot, garnished with grated Parmesan cheese and chopped fresh parsley
