Smultringer Norwegian Doughnuts with Apple Glaze
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup buttermilk
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- Oil for frying vegetable or canola
- For the Apple Glaze:
- 1 cup powdered sugar
- 2 tbsp apple juice
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp vanilla extract
- Pinch of salt
- Optional: Sprinkles for decoration
Instructions:
Mix the flour, baking powder, granulated sugar, and salt in a sizable bowl
Whisk together the eggs, buttermilk, melted butter, and vanilla extract in a separate bowl
Blend thoroughly
Mixing until just combined, pour the wet ingredients into the dry ingredients
The dough should be sticky; do not overmix
Refrigerate the dough for a minimum of half an hour after covering it with plastic wrap
Roll out the dough to a thickness of about 1/2 inch on a surface dusted with flour
To cut out doughnuts, use a round cookie cutter or a doughnut cutter
In a deep pan, heat the frying oil to 350F 175C
A few doughnuts at a time, carefully add them to the heated oil and cook for two to three minutes on each side, or until they are golden brown
Using a slotted spoon, remove the doughnuts and set them on a plate covered with paper towels to absorb any remaining oil
To make the Apple Glaze, blend powdered sugar, apple juice, nutmeg, cinnamon, vanilla extract, and a small amount of salt until a smooth consistency is achieved
Let any extra doughnut glaze drip off as you dip each cooled doughnut into it
If desired, you can also decorate with sprinkles
Before serving, let the glaze settle for a few minutes
