Avocado, Beet, and Goat Cheese Salad
The creamy avocados, earthy roasted beets, and tangy goat cheese in this Avocado, Beet, and Goat Cheese Salad go very well together. This healthy and colorful salad tastes great with the simple balsamic vinaigrette dressing.
Ingredients:
- 2 avocados, sliced
- 2 medium beets, roasted and sliced
- 4 oz goat cheese, crumbled
- 4 cups mixed greens
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1 tablespoon honey
- Salt and pepper to taste
Instructions:
To begin, roast the beets
Turn on the oven and heat it up to 400F 200C
Make sure the beets are clean and trimmed, then wrap them in foil
For 45 to 60 minutes, or until they are soft when poked with a fork, put them in the oven
Take the beets out of the oven, let them cool, and then cut them into slices
Shake the honey, olive oil, salt, and pepper in a small bowl to mix them
This is the vinaigrette
Mixed greens, roasted beet slices, avocado slices, and goat cheese crumbles should all be put in a large salad bowl
Pour the vinaigrette over the salad and toss it around a little to make sure everything is covered
Serve the salad right away, and if you want, top it with more goat cheese
