Chocolate Chip Cookie Icebox Cake



Savor this Chocolate Chip Cookie Icebox Cake, which is rich and creamy. This dessert doesn't require baking, making it the ideal way to sate your sweet tooth without using the oven.

Ingredients:

  • 3 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 packages about 24 ounces chocolate chip cookies
  • 2 cups mini chocolate chips
  • 1/2 cup chopped nuts optional
  • Chocolate shavings for garnish optional

Instructions:

Beat the heavy cream in a mixing bowl until stiff peaks form

Gently fold in the vanilla extract and powdered sugar until the whipped cream is well combined

Apply a thin layer of the whipped cream mixture to the bottom of a baking dish measuring 9 by 13 inches or a serving dish of a comparable size

Cover the entire surface of the whipped cream with a layer of chocolate chip cookies

Cover the cookies with a layer of the whipped cream mixture

Evenly distribute a small handful of chopped nuts and mini chocolate chips if using on top of the whipped cream

Layers should be repeated until you run out of ingredients, starting with another layer of chocolate chip cookies

Add a layer of whipped cream on top to finish

Once the cake has firmed and the cookies have softened, cover the dish with plastic wrap and place it in the refrigerator for at least 4 hours

If desired, add more mini chocolate chips and chocolate shavings as a garnish before serving

Cut into slices and present cold
